Greek Yogurt Bagels
Ingredients
1 cup all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt (IMO I could take or leave this)
1 cup of plain greek yogurt (fat, no fat just use what you have). Macros below are based on 2% MF
1/4 cup Blueberries (I use frozen)
1/3 cup of all purpose flour for kneading
1 tbsp melted butter or coconut oil (See notes)
Directions
In a bowl mix flour, baking soda & salt
Add yogurt and mix until it forms a ball (this is going to be very sticky)
Fold in blueberries (insert Schitt’s Creek joke)
Sprinkle some of the flour on your counter and gentle knead the dough. I like to make sure the surface area of the dough is floured and no longer super sticky
Cut into 4 or 6 equal pieces and form into a bagel shape (don’t for the hole!)
Brush top with melted butter or coconut oil
Line air fryer basket with parchment paper and add bagels (try to keep them from touching for an even cook)
Air fry at 350 for 20 minutes flipping half way. This really is air fryer specific, I would start with 8 minutes a side and then check them. Alternatively, you can bake at 350 for 30 minutes but you will find it produces a more dough like bagel
Let cool for a few minutes and enjoy!
NOTES:
I have accidentally added the butter into the dough, turned out pretty good
I have also used a spray of avocado oil on top of the bagel (as opposed to butter) and springled a little bit of Swerve granular sugar on top - loved it!
I have a bariatric stomach so, I have calculated the recipe at 4 or 6 potions.
For my insulin resistant diabetics, I paired this with eggs and I did see a small spike but stayed within my target range WIN WIN
Tried this with coconut flour, epic fail
This recipe is quite possibly limitless, you could replace the blueberries for chocolate chips if you’re married to a grown man who doesn’t eat fruit. Mom is excited to try with cheddar cheese, you could also add some jalapeños, keep them plain and top with everything but the bagel seasoning (would omit salt in the recipe if you do). Cinnamon and raisin, even pumpkin spice if that’s your jam!
Also - please don’t forget humans NEED carbs to function. They are not the enemy!
