BBQ Chicken Crust Pizza
I was unsure about this one, but it was a great addition and something different. I made this for dinner one night, but it was so easy to reheat in the air fryer I ate it for breakfast and lunch over the course of three days.
Also - if you bite into this and really want it to be greasy, cheesy, fluffy, pizza pizza you’re going to be disappointed. Take it for what it is, a fun reinvention of food without your insides feeling like a giant pile of shit after. However, somedays you just need to eat the slice of pizza, and that’s on real life and balance.
Ingredients
Crust
450g ground chicken (the small container you can purchase at the grocery store)
2 eggs
1/2 cup of parmesan cheese
1 tsp garlic powder
1tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
Toppings
2/3 cup sugar free BBQ sauce (I used G Hughes original for this)
1 cup mozzarella cheese (I always use reduced fat)
Whatever the heck you want
Directions
Crust
Set oven to 400F and line a baking sheet with parchment paper
Mix together all crust ingredients together until fully combined. It will have a gooey/wet consistency
Transfer to baking sheet and spread into a thin, even rectangle (thinner = more crispy)
Place in oven for 25 minutes or until golden and firm (my first attempt the crust wasn’t quite thin enough and cooked for 30 minutes). Let stand for 5 minutes when done cooking (leave it on the pan)
Pizza
Increase heat to 425F
Spread on your BBQ sauce, toppings and cheese
Place back in oven and cook for another 10 minutes until cheese is melted and bubbly. Can also broil for a minute or two just keep an eye on it do you don’t burn the crust.
Remove from oven and cool slightly
Cut length wise in half and then into equal slices for a total of 8 pieces
I topped mine with what I had on hand, onion, green pepper, some pineapple. I even added some red pepper flakes once the BBQ sauce was on.
